i think this is done because the father is showing his son in law the most respect and honoring him that he has been chossen to marry his daughter.........
It comes from an ancient practice where the bride was considered property. When the bride's father "gave her away" hew was giving away his property to the husband.
i think its showing that the father is approving of the mariage.
